For the Strawberry Cookie Base:
- Strawberry Cake Mix - any brand.
- Vegetable oil - Sunflower or any regular cooking oil.
- Eggs - Use large eggs at room temperature.

- Preheat the oven to 350 F. Line a rimmed baking sheet or cookie tray with parchment paper, and set aside.
- In a large bowl mix together cake mix, oil, and eggs until everything is well incorporated.
Bake the Strawberry Cookies
- Drop 8 large spoonfuls of cookie dough onto cookie sheets. Four cookies per sheet is best.
- Bake for 10 to 12 minutes. Let cool for 5 minutes and then cool on a cooling rack.
PRO TIP: You can use a large mouth glass or cookie cutter to jiggle around each cookie when first removed from the oven. This will shape them into more uniform circles.
Add The Cream Cheese Buttercream
- In a large bowl, mix the cream cheese, powdered sugar, vanilla, and heavy cream until thick and creamy.
- Transfer the cream cheese buttercream to a piping bag and pipe each cookie with a zig zag.
