    Ingredients

    This strawberry crunch cookie recipe is super easy for busy moms! You'll use a package of regular strawberry Jello, a strawberry cake mix, store bought buttercream if you don't want to make your own, and basic pantry ingredients.

    Put on your apron and let's get whisking up these super sized strawberry crunch cookies!

    For the Strawberry Cookie:

    • Strawberry Cake Mix - any brand.
    • Vegetable oil - Sunflower or any regular cooking oil.
    • Eggs - Use large eggs at room temperature.

    Pro Tip: You can also use our Pink Sugar Cookie recipe if you prefer making the cookie base from scratch.

    For the Cream Cheese Frosting:

    • Cream Cheese - Softened to room temperature.
    • Powdered sugar - Sift if it is lumpy.
    • Heavy cream - or milk if you prefer.
    • Vanilla extract - optional.

    For the Strawberry Crumple Topping

    • Golden Oreos - the Vanilla Oreos.
    • Strawberry Jello - the small 3.0 oz box, regular sugar version.
    • Butter - Melted.

    How to Make Strawberry Crunch Cookies

    This strawberry crunch cookie recipe is super easy when using a strawberry cake mix, but not much harder when making the cookie base from scratch with our pink sugar cookie recipe.

    Make The Strawberry Cookie Base

    1. Preheat the oven to 350 F. Line a rimmed baking sheet or cookie tray with parchment paper, and set aside.

    1. In a large bowl mix together cake mix, oil, and eggs until everything is well incorporated.

    Bake the Strawberry Cookies

    1. Drop 8 large spoonfuls of cookie dough onto cookie sheets. Four cookies per sheet is best.

    1. Bake for 10 to 12 minutes. Let cool for 5 minutes and then cool on a cooling rack.

    PRO TIP: You can use a large mouth glass or cookie cutter to jiggle around each cookie when first removed from the oven. This will shape them into more uniform circles.

    Add The Cream Cheese Buttercream

    1. In a large bowl, mix the cream cheese, powdered sugar, vanilla, and heavy cream until thick and creamy.

    Substitutions

    If you do not want to use a cake mix to make the cookie base for these strawberry cookies, you can use our strawberry sugar cookie recipe we used for our Chocolate Dipped Pink Sugar Cookies. They will be just as fabulous!

    Variations

    You can make variations with this basic cookie recipe. Change out the cake mix flavor, frosting flavor, and crumble topping easily using these ideas:

    • Caramel Crunch Cookies - Use a Caramel flavor cake mix, the cream cheese frosting, and use 8 caramel coconut cookies (Keebler sells them, they look like Girl Scout Samosas) to crumble up for the topping.
    • Lemon Crunch Cookies - Use a lemon flavored cake mix, homemade or store bought lemon frosting, and crush Lemon flavored Oreos with lemon Jello.
    • Orange Crunch Cookies - Use a Orange flavored cake mix, homemade or store bought buttercream frosting, and crush Golden (Vanilla) Oreos with Orange Jello.

    Are these Strawberry Crunch Cookies like Crumble Cookies?

    Yes, they created in the style of the jumbo size Crumble Cookies. This strawberry crunch cookie recipe is not a true copycat Crumble Cookie though, as Crumble may or may not have make a similar version. These are jumbo cookie versions of a popular Strawberry Crunch Cake I made, but a big a thick as Crumble cookies.

    Can I freeze these cookies?

    Yes, these Strawberry Crunch Cookies freeze beautifully. Keep them on one layer so that they keep their shape. Freeze in an air tight container for up to 3 months.

    • Wash hands after touching raw meat
    • Don't leave food sitting out at room temperature for extended periods
    • Never leave cooking food unattended
    • Use oils with high smoking point to avoid harmful compounds

    For the Cookie Base

    • 1 box strawberry cake mix any brand
    • ½ cup vegetable oil
    • 2 large eggs

    Cookie Cream Cheese Buttercream

    • 4 oz cream cheese
    • 2 cup powdered sugar
    • 2 tablespoon heavy cream
    • 1 teaspoon vanilla extract

    Strawberry Crunch Topping

    • 8 Golden Oreos Vanilla Oreos
    • 1 3 oz Strawberry Jello small 3.0 oz box
    • 3 tablespoon butter melted

    Instructions
