I used skinless, boneless chicken breasts for this recipe, but skinless boneless chicken thighs work fantastic also. It's just a matter of whether your family prefers white or dark chicken meat.
Be sure to remove any skin from the chicken, as otherwise it will make the dish very greasy.
- Chicken breasts - Boneless, skinless. Or use chicken thighs.
- Pineapple chunks - Use a 20 oz can in juice, or about 3 cups of fresh pineapple chunks.
- Honey - You can use brown sugar if you don't have any honey.
- Ginger - Fresh grated. It's much easier to grate frozen ginger root than fresh!
- Smoked Paprika
- Salt
- Red Bell Pepper - Chunked.
- Cilantro - Fresh chopped cilantro.

How to Make Sweet Hawaiian Crockpot Chicken
Just throw everything in the slow cooker in the morning and come home to a delicious and flavorful meal waiting for you. The slow cooker will do the rest of the work!
Place Chicken In The Crockpot
- Spray the bottom of the slow cooker with some non stick cooking spray, and then place the chicken breasts in the bottom of the slow cooker.
Season The Chicken
- Mix the honey, soy sauce, grated ginger, smoked paprika, salt, and red pepper flakes in a small bowl, and then pour over the chicken.
- Pour the can of pineapple chunks and juice over the seasoned chicken in the slow cooker.
Finish Cook With Red Bell Pepper and Cilantro
- Cover the slow cooker and set the heat to low and cook for 6 hours.
- Remove the lid and the chopped red bell pepper. Cover and continue to cook for an additional 30 to 45 minutes, or until the red bell pepper is at your desired tenderness.
- Garnish with the chopped fresh cilantro and serve the chicken with pineapple chunks and red bell pepper over rice.
