How to Make Valentine's Day Pretzels
Grab those pretzels and let's get started on these beautiful white chocolate pretzel creations!
Melt the Candy Wafters
- Melt the candy wafers by using a Wilton candy melter, the microwave, or even an inexpensive sous vide circulator attached to a saucepan of water.
Microwave Method: Melt the candy melts in the microwave in 20 second increments. Stir in between each increment. Remove when fully melted.
Wilton Candy Method: Add candy melts to the melter and turn it on. Stir every few minutes until fully melted.
Sous Vide Melting Method: Attach the sous vide circulator to a saucepan ¾ full of warm water. Seal each color of candy melting wafers in sous vide bags or air tight ziplock bags. Tuck each bag in the water and turn the sous vide to 115 F. After it reaches 115 F, replace some of the water and replace with ice cubes to reduce the temperature to 80 F. While the water works it way back to 91 F, take the bags of candy melts out every few minutes and squish them to help create the Form V crystals needed to have well tempered candy melts. Sous Vide Chocolate Tempering
I've learned fool proof way to temper chocolate or melt candy melts with out any siezing! You can leave any unused chocolate or candy melts in the sous vide or ziplock bag, and use it for another project later too. Plus, there is almost NO clean up!
How to Melt Candy Wafers Perfectly:
- Put your chocolate or candy wafers in a sealed ziplock bags or sous vide bags
- Add the sealed bags to a container of water, attach the sous vide circulator and set the temperature to 115 F. It should take about 5 to 6 minutes.
- Replace some of the hot water with ice cubes, so that the temperature quickly lowers 80 to 81 F.
- Then, reset the sous vide circulator to 90 F, pulling the sealed bags out every so often to squish it around with your fingers. This helps the chocolate and melting candy to have a good crystal formation. The squishing is required, as agitation is needed to create the Form V crystals for the best tempered chocolate.
- Hold the melted chocolate at the 90 F mark until ready to use.
This heating, then cooling, and then bringing back to 90 F, is how you get the best tempered chocolate or melting candy wafers firming up fast with a smooth surface. The high, low, medium temperature changes create Form V beta prime crystal formation. Reseal and save the bags of leftover chocolate and/or melting candy for later.
