This recipe for making homemade Almond Vanilla granola, and the Yogurt Granola Cups, are both so versatile you can easily adjust the ingredients to suit whatever seeds, nuts, or dried fruits you have on hand.
So let's get started on making this homemade granola and using it to make some yogurt and granola cups that will satisfy any sweet tooth.

Ingredients needed to make this Almond Vanilla Granola :
- Oats - Regular old fashioned rolled oats or Bob's Red Mill thick rolled oats are best. Gluten free oats if you have a gluten intolerance.
- Almonds - Raw, whole almonds.
- Mixed Nuts - Unsalted.
- Pepitas - Raw pepitas seeds.
- Sunflower seeds - raw, seeded.
- Dried Apricots - cut into small chunks.
- Dried Dates - cut into chunks.
- Raisins - Golden raisins, or dried cranberries.
- Honey - any kind you like, Maple syrup if you are vegan.
- Vanilla extract - or a vanilla bean for French Vanilla Almond Granola
- Coconut oil - melted. Coconut oil has the best shelf life.
- Salt

How to Make Almond Vanilla Granola
With just a few healthy ingredients and some light work in the kitchen, you can have yourself a delicious and wholesome granola to use every day for breakfast, top on yogurt or ice cream sundae's, or just snack on.
Follow the easy directions below and in the printable recipe card to make your own super fuel granola!
Measure Nuts, Fruits, and Oats into a Bowl
- Preheat the oven to 350 F. Line a rimmed baking sheet pan with parchment paper. Set aside to turn the mixed granola onto for baking after mixing.
- Measure the oats, almonds, mixed nuts, pepitas, sunflower seeds, and dried cut apricots, dates, and golden raisins into a large bowl.

Sweeten with Honey
- In a small bowl, mix the honey with the melted coconut oil, vanilla, and salt. Drizzle the honey and coconut oil mixture over the bowl of granola ingredients.

Blend Oats, Fruits, and Nuts
- Mix all the ingredients until they are lightly coated with the honey mixture. It's easier to use a pair of disposable nitrile gloves and mix by hand.

Bake on a Sheetpan
Spread the Almond Vanilla granola on the parchment lined, rimmed sheet pan. Bake 18 minutes and check. If not golden brown on top, cook another 2 minutes. Don't over bake. You want just a light golden brown, as the granola will bake a little more after removing from the hot oven.

Store in a Mason or Bail Jar
Remove from the oven and let cool completely to room temperature. This granola will become crisper as it cools. Store in mason jars, bail jars, or plastic Rubbermaid type storage containers. Add the vanilla bean now if making this French Vanilla Almond Granola.

Serving Suggestions
To serve, alternate layers of Greek yogurt and Almond Vanilla granola in parfait cups or dessert glasses. Top with a drizzle of honey, or even a few mini chocolate chips. Almond Vanilla granola is also delicious served with our Unsweetened Applesauce!

Substitutions
You can swap out any of the ingredients if needed. If you need your granola to be gluten free, use gluten free rolled oats. You can substitute the honey for maple syrup is you want a vegan granola. You can also skip the vanilla extract and add a vanilla bean to the storage container for French Vanilla Almond Granola.
Variations
Use this Almond Vanilla granola as a base for making Chocolate Chip Granola, Tropical Granola, and Cinnamon Granola, with just a few additions to this recipe.
- Chocolate Chip Granola - After the homemade granola has completely cooled, toss in ½ to 1 cup of mini milk chocolate morsels.
- Tropical Granola - Change the dried fruits to dried pineapple, pieces of dried mango, and dried papaya. Nuts can be pecan, some brazil nuts, and large flakes of unsweetened coconut. It's less expensive to find a Tropical trail mix blend though, and add 3 cups of it in place of the separate nuts and dried fruits!
- Cinnamon Granola - Add 1-2 teaspoons of ground cinnamon to your granola mixture after tossing with the honey and coconut oil mixture. Omit the vanilla extract though so the flavors don't compete.
- French Vanilla Almond Granola - Add a vanilla bean to the bail jar of stored granola. It will impart a stronger, richer French vanilla flavor!
