Ingredients Overview

This Lipton Onion Soup meatloaf recipe calls for ground beef, but you can use any type of ground meat you like. If you don't have any Panko bread crumbs, don't worry, you can use crushed saltine crackers instead.

How To Make Lipton Onion Soup Meatloaf

  1. Start preheating your oven to 350 F. Set aside either a rectangular casserole dish with sides at least 2" high or a 5 x 9 inch loaf pan. You will also need a very large mixing bowl.

Pro Tips

I'm not a fan of squishing raw meat and eggs with my bare hands, so I use Nitrile gloves. I just peel the gloves off after mashing and all the ingredients together with my hands.

They're inexpensive, and you will need them for working with any chile peppers.

  1. Put all your ingredients (except for the ketchup reserved for glazing the meatloaf) in a large stainless steel bowl. Mix until just incorporated, don't over do it.

  1. Brush your prepared meatloaf with ketchup glaze. You can tent the meatloaf with aluminum foil if you like also.

  1. Make sure to either postpone glazing or tent it up so that the foil doesn't stick to the top of the meatloaf. The aluminum foil helps keep the outer layer of the meatloaf moist longer so that the meatloaf does not get a shallow crack down the center. Which is quite common.
  2. Remove the foil 15 minutes before the end of cooking and add your ketchup glaze if you haven't already.
  3. Remove from your oven after the cooking time. You can use a thermometer to check the internal temperature, it should register at least 160° F. If you like a thicker ketchup glaze, glaze it a second time during the last 15 minutes of cooking time.

Substitutions and Variations

Try making a few substitutions and variations using this recipe:

  • Meat Options: Feel free to swap ground beef for ground turkey, chicken, or a mix of beef and pork. Just remember that leaner meats might need a little extra moisture from ingredients like grated onion or a touch more sauce.
  • Binder Alternatives: If you don't have breadcrumbs, crushed saltine crackers, Panko, or even quick oats can work in a pinch.
  • Extra Flavor Boosts: Amp up the taste by mixing in a dash of Worcestershire sauce, a tablespoon of ketchup or BBQ sauce, or some finely minced garlic into the meat mixture.
  • Spice It Up: For a bit of a kick, add a pinch of red pepper flakes or a dash of your favorite hot sauce.
  • Veggie Power: Sneak in some extra nutrition and moisture by finely grating carrots, zucchini, or bell peppers into the mix. Just be sure to squeeze out any excess liquid from the veggies.
  • Glaze Alternatives: If you're not keen on the classic ketchup glaze, try a mixture of BBQ sauce, brown sugar, or even a savory mushroom gravy for topping.

Frequently Asked Questions

What is the secret to moist meatloaf?

Don't skip adding eggs, ketchup, tomato paste, mustard, Worcestershire, barbecue sauce or some combination of wet seasonings. They don't just add flavor and texture, they help make this Lipton meatloaf recipe super juicy.

Why is my meatloaf dry?

Dry meatloaf usually happens from overmixing or overbaking. Mix gently until just combined and use a meat thermometer to ensure it doesn't cook beyond 160°F.

What holds meatloaf together?

The breadcrumbs, Panko, or oatmeal combined with eggs and the milk act as a binder to hold this meatloaf soup mix recipe or meatballs together.

Why does meatloaf crack?

Meatloaf usually cracks when the outside has cooked much more quickly than the inside.

Why is my meatloaf tough?

You probably over mixed the ingredients. Just mix the ingredients together until combined. You will be mixing it more while shaping it for the baking pan.

Can I add a glaze other than ketchup to this meatloaf?

Yes, try a BBQ sauce, brown sugar and mustard glaze, or even a balsamic glaze for a tangy twist instead of the classic ketchup topping.

Should you cover meatloaf while baking?

It helps prevent the meatloaf from drying out. Use a sheet of aluminum foil and remove during the last 15 minutes of cooking. An aluminum foil cover will help prevent cracking as the outer layer of the meatloaf won't tighten up as fast. Add the glaze during that last cook time, so the aluminum foil does not stick to it when cooking.

Can I prepare the meatloaf ahead of time?

Yes, you can mix and shape the loaf, then cover and refrigerate for up to 24 hours before baking, making this recipe great for meal prep or busy dinner days.
